SHABO SPARKLING WINE

A collection of reservoir sparkling wines created according to the Charmat technology. Produced from the truly Champagne grape varieties of Pinot noir and Chardonnay, and from Riesling, Aligote, Pinot gris, Pinot blanc and Muscat Ottonel varieties grown on the best sites of Shabo terroir.

The Charmat technology is based on natural fermentation as in the traditional method of champagnization in a bottle, with the only difference being the role a bottle plays by reservoirs of various capacity, the so-called acratophores (Greek: akratophoros – a vessel for pure wine), which can hold contain up to 20 thousand champagne bottles. The wine production process takes 2-4 months. All stages of the production process are controlled by international experts from the Institut Oenologique de Champagne, France.

Shabo reservoir sparkling wines are the embodiment of skills of Shabo winemakers. They are fresh and exquisite, distinguishable for the excellent taste, vivid flavor and astonishing play in the wineglass.

Every bottle is produced from 1.6 kg of the highest-quality grapes.

SHABO CLASSIC

A collection of high-quality still wines. Produced from grapes harvested from vines reaching the optimal level of maturity that grow on Shabo terroir sites with favorable microclimate and soil with high quality characteristics. The load on a vine is controlled, ranging between 1.8 and 2.8 kg of grapes per cluster. Grapes are harvested by hand, and 15 minutes later, they are already at the grape receipt and processing facility where they undergo sorting. After that are the vinification using new-generation equipment and blending with aged wines. To preserve the freshness and rich varietal flavor range, the wine is stored in state-of-the-art stainless steel reservoirs with controlled temperature. Quality is controlled at all stages of production process by international experts from the French company Derenoncourt Consultants.

Shabo Classic feature refined, harmonious still wines fully retaining the taste and flavor of freshly-harvested grapes. Their style ideally matches the modern winemaking trend of ‘wine freshness’. These wines have balance structure and delicate roundness. Every bottle is produced from 1.2 kg of the best-quality grapes harvested in Shabo terroir.

SHABO UKRAINIAN BRANDY

A collection of high-quality Ukrainian brandies blended with vintage brandy spirits. Produced from selected French and Ukrainian brandy spirits aged for 3, 4 and 5 years, delicately supplemented with vintage brandy spirits aged for 6 to 10 years.

Skilful blending with aged brandy spirits gives Shabo brandies a vivid bouquet distinguishable for a special aroma dominated by flower notes and for moderate tones of aging in oak casks, and a pleasant goldish-amber color.

Every 0.5 L bottle is produced from over 4.5 kg of selected grapes.

SHABO CLASSIC AGED SPARKLING WINE

A collection of aged sparkling wines created according to a classical technology of champagnization in a bottle. Produced from the truly Champagne grape varieties of Pinot noir and Chardonnay grown on outstanding sites of Shabo terroir.

The production of these sparkling wines takes between 9 months and 3 years. During this time, a continuous process of natural fermentation occurs in every separate bottle. Gradually, the wine improves and matures, attaining impeccable taste and aromatic qualities. All stages of the production process are controlled by international experts from the Institut Oenologique de Champagne, France.

Shabo Classic feature aged, excellently balanced sparkling wines with elegant taste, refined flavor and enchanting play in the wineglass. Every bottle is produced from 1.6 kg of the highest-quality grapes.

SHABO GRAPE VODKA

A collection of elite grape vodkas. Shabo grape vodkas are based on selected grapes of Muscat Ottonel, Rkatsiteli, Riesling, Sauvignon Blanc, and Chardonnay varieties harvested by hand on the best sites of Shabo terroir.

The recipe of this high-end noble beverage was developed by Shabo winemakers. Triple distillation, treatment with milk, and subsequent filtration on diamond, gold and silver filters give this elite grape vodka crystal clarity and additional unique natural properties.

Every 0.5 L bottle is produced from over 4.5 kg of selected grapes grown on Shabo terroir.

SHABO CLASSIC VERMOUTH

A collection of classic vermouths. Shabo Classic vermouths are based on European white and red grape varieties grown in Shabo vineyards. All vermouth recipes were developed by Shabo winemakers. Only natural ingredients of plant origin are used in the production of this unique collection.

Shabo Classic vermouths have the notes of bitter Artemisia and sweet vanilla, exotics of nutmeg and lime, and spiciness of Ceylon cinnamon and coriander present in classic vermouths.

Every bottle is produced from over 1.0 kg of the highest-quality grapes.

A collection of ordinary still wines in a convenient bag & box packaging

Produced from grapes harvested from young vines in Shabo terroir by a modern combine and delivered within 30 minutes to the grape receipt and processing facility. The vinification process takes place using state-of-the-art equipment. To preserve the freshness and varietal flavor range of grapes, the wine is not aged in oak barrels but stored in stainless steel reservoirs with controlled temperature.

Shabo Wines feature light, balanced still wines. A convenient bag & box packaging ideally retains the fine flavor and pleasant taste of wines from this collection. Their style matches the modern winemaking trend of ‘wine freshness’. Every three-liter bag & box packaging is produced from 4.3 kg of grapes.
